Robert John Matthews, a Lab Technician with an extensive background in Horticulture and Fruit Winemaking, has been involved in Protected Cropping/ Controlled Environment Agriculture (CEA) for nearly 35 years. For the past 25 years, a focus has been researching wasabi cultivation, developing methods and refining techniques to grow this rare and highly prized plant, his motto being: "Perfection by Protection." I recently served Pickled Wasabi Greens and Pickled Wasabi Petioles, both being Traditional Style, on an antipasto platter ...after encouraging my guests to try the Wasabi, they were pleasantly surprised, and impressed!  They expected the Wasabi to be hot, instead they were delighted by the mild tasty pickle with a difference, which became the talking point of the platter.

 

Later I served a selection of my home made ice-creams, to finish the dinner. The outstanding favourite was the Wasabi and Lime. I used around two teaspoons of Wasabi Leaf Powder, along with the finely grated rind of a lime in that particular batch. I will definitely be making wasabi ice-cream again!
