Our Wasabi Leaf & Petiole Powder is a 50/50 blend. Studies into Glucosinolate content of fresh Wasabi mostly report leaves to have a slightly higher content than petioles. Our own trials have further revealed fresh petioles to have a much higher moisture content. With careful cool temperature drying in fact, the yield of powder from 1kg of fresh leaves is around 110g, while yields from the same weight of fresh petioles is only around 60g. What this means is that, upon rehydration, the resultant paste from petiole powder would actually have a significantly higher ITCs content than leaf powder paste, when equal amounts of water are added...

Our 50/50 blend of leaf and petiole powders will provide a somewhat higher level of ITCs (inc 6-MSITC) and associated spiciness when compared to equivalent weights of 100% Wasabi Leaf Powder, although the amount of green colour will be halved. It's a great product and can be included in smoothies, and when making delicious ice creams etc with health benefits in mind.
