A traditional sharkskin grater is unbeatable for those seeking the most authentic wasabi experience. Samegawa Oroshi (Grater) of shark skin, is traditionally used and has finer teeth than the surface of your typical grater. This produces super-fine grating with a high content of air pockets, which maximizes the essential flavours of the wasabi paste you create. The cells of the wasabi rhizome need to first be broken, to enable the natural enzymatic conversion of glucosinolates into spice (isothiocyanates). This medium sized grater is made by the artisans of Chojiro in Gifu Prefecture, from high-quality Sharkskin and Japanese Hinoki Cypress wood.
